Easy Lemon Tarts
These are the absolute easiest lemon tarts I have ever made and they turned out GREAT! If you follow this blog you are well aware that I just never seem to have enough time! I’m always in the mood to bake or craft or go to Disney but being in the mood for something and having time for it are two completely different stories.

Throw a teething baby into the mix and I’m surprised I have time to make dinner let alone make anything extra. I needed something delicious and super easy and boy did I score!
With just about 10 minutes of cook time they’re the perfect, fast blend of sweet and tart and I kid you not, they’re the EASIEST EVER.
This is a bit of a cheater recipe which is what makes it so easy but I promise, no one will ever know unless you tell them. Looking for an affordable and durable muffin tin? - 1c Lemon Curd
- 1 package of pre-cut mini sugar cookies
- Cool Whip
- Mini Muffin Tin
- Preheat oven to 400 degrees
- Place pre-cut cookies into mini muffin tin and bake for 10 - 15 minutes or until golden
- Take wooden spoon and press center of cookies down creating mini cookie cups
- Fill with Lemon Curd and let cool
- Top with Cool Whip
- Try them topped with fresh raspberries or blueberries!
